Shabbat Shalom! - Gluten Free Pain Juif (Jewish Bread) Recipe

On occasion, I like to whip up a loaf of my family's traditional recipe. This normally calls for all-purpose flour and refined sugar, so I do substitute most of the ingredients to fit a healthier version for my liking!

Here is the recipe:
Ingredients:
3 1/2 cups of gluten free all purpose flour or whole wheat flour
1 packet highly active yeast
1/2 teaspoon anise seeds
1/2 teaspoon salt
1 tablespoon of Pyure Organic All purpose stevia sweetener
3 tablespoons of coconut oil
1 cup of warm plant based milk (I use almond milk)
1/2 cup of warm water
1 tablespoon of sesame seeds
1 egg yolk, lightly beaten (for topping)
Directions:
Sift flour in a large bowl.
Mix in ingredients 1 to 7. Use your hands to combine well, until dough has a grainy texture. This should take about 2 minutes.
Gradually add the milk and then water.
Knead the dough for 10 minutes.
Cover bowl with a towel. Let it rest in a warm area for 2 hours (I usually leave it outside in the sun).
Put dough in an un-greased bread pan.
Brush the top with egg yolk.
Sprinkle the sesame seeds on top.
Cover bowl with the towel again, an let it rest in a warm area for another 20 to 30 minutes.
Preheat oven to 350 degrees F.
Bake for 30 minutes.
