Vegan Buddha Bowl Recipe

This is such a simple bowl to put together when I'm feeling like I want something light, nourishing, and a variety of flavors.

Ingredients:

Note: The following ingredients are written clockwise relative to the image above.*

  • 1/4 slice of a whole raw pepper

  • 1/3 cup of barley

  • 1/4 of an avocado

  • handful of green lettuce

  • 5 cherry tomatoes cut in halves

  • 1/4 cup of sliced beets

  • 1/2 cup of cauliflower rice

  • 1/4 cup of corn

  • 1/4 cup of unsalted raw cashew nuts

Dressing/ toppings:

  • white wine vinegar

  • 1 tsp of Agave nectar

  • 1 tsp of Bee pollen

Directions:

  1. Place all the above ingredients together into a big bowl.

  2. Drizzle dressing/toppings on the top of completed bowl.
